The 2023 Valpolicella Ripasso Classico Superiore from Paolo Cottini is a rich, generous red made by the traditional ripasso method. Around March, the young Valpolicella is passed a second time over the pomace left from Amarone, which adds colour, structure and body. The result sits between a Valpolicella and an Amarone, with depth and warmth but still plenty of freshness.
Tasting Notes:
Colour: Deep ruby red with garnet hints.
Aromas: Roasted nuts, hazelnut, dried fig and raisin with ripe cherry, balsamic notes and a touch of undergrowth.
Palate: Warm and full‑bodied with gently aged tannins and fresh acidity, leading to a long, mineral finish with a salty note.
